“I often think about my family when I cook. I remember the days of vacation wandering around Puglia. With the excuse of sheltering from the sun, we stopped to eat in different places. It was in those moments that I met the true flavors of the earth, the countryside and the sea because this is the heart of Puglia. The dishes do not just tell an ancestral story, they are a personal point of view made of memories, nostalgia and time.

There it is that overwhelms everything: time. It passes through us, relieves all nostalgia and matures us. The time that goes into each dish is the principle of the aging of the fish. With every taste, let yourself be embraced by those memories that resurface ».
